2014 Big Rock Block Estate Cabernet Sauvignon
All fruit was picked by hand very early in the morning while it was still cold. Small batches were brought into the winery where we processed the fruit immediately into small tanks. By keeping the grapes in their individual lots, we could handle each batch differently to achieve varied characteristics. The result laid the foundation of complexity by creating unique blending tools for this Cabernet Sauvignon. Malolactic fermentation followed post-primary fermentation and once completed the wine was racked, blended and returned to barrel. This wine aged for 24 months in 100% French oak, 35% new, 40% one-year-old barrels and 25% 2-year old barrels. The oak elevage helps lift the wines aroma without overshadowing it with excessive oak characteristics. Each barrel was hand-racked three times during aging to ensure clarity after bottling
