Our Petit Verdot grapes were picked early in the morning, when temperatures are at their coolest. The grapes were separated from the stems and put into small fermenting bins with a dry ice blanket for 2-4 days. For primary fermentation, the must was inoculated with a special yeast that compliments the aromas and flavors of Petit Verdot. After secondary fermentation, the wine was transferred into French Oak barrels and racked 3 times, removing some sediment and providing the wine some controlled oxygen. Our Petit Verdot spent a total of 24 months in barrels. This wine shows an intense deep purple color with bright fruit aromatics and flavors.
Aromatics: Dark raspberry, molasses, licorice and mild sage.
Body/Texture: Full bodied with chunky chewy tannins and a sweet juicy finish.
Flavor Profile: Ripe red plums, grape cola, licorice and black tea.
