2016 Alexander Valley Estate Chardonnay
We handpicked our Chardonnay early in the morning to preserve the fruit’s integrity and to let the cold settle the juice. The whole clusters went into the bladder press for gentle pressing. The juice was moved to stainless steel tanks for settling and clarification. After three days, it was racked off the lees to French oak barrels where fermentation was initiated with a yeast that complemented our fruit. Once primary fermentation was completed, secondary fermentation began until it reached 100% malolactic fermentation conversion, providing the richness and depth that are hallmarks of our Alexander Valley Chardonnay. Aged sur lie in 100% French oak, the barrels were periodically stirred to develop a creamy texture and exotic flavors. After 15 months, this vintage was racked from barrels to tanks for the final blend assemblage.
