We handpicked our Chardonnay for the Area 27 early in the morning to preserve the fruit’s integrity. The Area 27 fruit, which hails from Block 27 is always one of our best Chardonnays each year. The whole clusters were added directly to the bladder press for a gentle pressing. After cold settling, we transferred the juice to stainless steel tanks for further settling and clarification. The juice was then racked off the lees and split evenly between a concrete egg tank and neutral French oak barrels. Aged sur lie in the egg and barrels and stirred periodically to develop exotic aromas and flavors, then racked to tanks for the final blend assemblage.
Aromatics: Aromas of white peach, honeysuckle and honeydew melon, with a hint of minerality.
Body/Texture: Beautifully balanced, a light to medium body, with a crisp elegant finish.
Flavor Profile: Rich complexity of an Asian pear, peaches and honeydew melon with hints of lemon meringue.
