2018 Alexander Valley Estate Sauvignon Blanc
The 2018 Sauvignon Blanc was picked at two separate picks, 3 days apart, September 4-7, 2018. The whole clusters went into the bladder press for gentle pressing. The juice was pumped to a tank to be cold settled. The cold temperature helps the sediment in the juice settle out of the juice to the bottom of the tank. Once this has happened the juice was then racked off the lees or sediment to another tank to begin fermentation. The fermentation was held in a cold jacketed tank at 60F until it was complete. The wine was then allowed to settle for 2 weeks and was pumped to 8-year-old white neutral barrels on light lees for the next 5 months. It was pumped out of barrels to tank just prior to bottling.
Aromatics: Hints of Lychee, grapefruit, star jasmine and the essence of clementines with a touch of lemongrass and fresh spring herbs.
Body/Texture: Soft and silky, with crisp bright acidity, and a refreshing finish.
Flavor Profile: Ripe grapefruit, lemon meringue and citrus with a whisper of lavender.
