2018 Alexander Valley Estate Sauvignon Blanc
We picked our first ever Sauvignon Blanc on the morning of September 4, 2018. The whole clusters went into the bladder press for gentle pressing. The juice was moved to stainless steel tanks for settling and clarification and then it went through fermentation over a 10-day period. Once primary fermentation was completed, the wine put in 100% 5-6 year old neutral barrels where it remained for 7 months until bottling.
