Winemaking Notes

We handpicked both Merlot and Malbec grapes to make this rosé. The fruit was picked together to make a “vin Gris” style of rosé. The Malbec was picked at 22.3 brix and the Merlot was picked at 22.0 brix respectively. We picked the grapes in the early morning while the fruit was cold into small bins. The bins were delivered to the winery where we combined the fruit together, whole cluster, in the press and gently pressed the grapes for their juice. Once we had the desired level of juice and color we cold settled the juice for 48 hours to allow the sediment to settle out to the bottom of the tank. We then pumped the juice off of its sediment to 8-year-old neutral French oak barrels and added a commercial yeast strain which encourages a slow fermentation at cool temperatures and fruity aromatics. Immediately after primary fermentation was complete we added SO2 to keep the native Malic acid intact. The new rosé was aged on very light lees, in neutral barrels, until we pumped it out of barrels to tank to prepare for bottling.

Tasting Notes

Aromatics:            Scents of fresh berries, a touch of crème Fraiche, ripe watermelon, rose water and hints of maraschino cherry.

Body/Texture:      Delicately crisp, light and seductive.

Flavor Profile:     Garden fresh watermelon, a trace of strawberry-rhubarb and touches of lychee that finishes with a whisper of Asian pear.
