2016 Clone Seventeen Estate Chardonnay
We handpicked our Chardonnay early in the morning to preserve the fruit’s integrity. The cold temperature of the fruit picked early in the morning helps to settle the juice. The whole clusters were delivered to our bladder press for gentle pressing. The juice was moved to stainless steel tanks for settling and clarification. After three days, it was racked off the lees to barrels where fermentation was initiated with a yeast that complemented our fruit. Once primary fermentation was completed, secondary fermentation began until it reached 85% malolactic fermentation conversion, providing the richness and depth that are hallmarks of our Chardonnay. We kept 15% of our native Malic acid to preserve acidity. Aged sur lie in 100% French oak, the barrels were periodically stirred to develop a creamy texture and exotic flavors. After 15 months, the wine was racked from barrels to tanks for the final blend assemblage.
Aromatics: Aromas of ripe apples, pears and guava with toasty notes with hints of vanilla bean and creme caramel.
Body/Texture: With 50% new French oak and 85% malolactic fermentation, this Chardonnay has a viscous, rich mouthfeel with a lingering finish.
Flavor Profile: The Robert Young Clone 17 offers distinct rich and bold flavors of tropical fruits, apple and crème brûlée with hints of cinnamon and spice.
