Winemaking Notes

We picked our first ever Sauvignon Blanc on the morning of August 24th.  The whole clusters went into the bladder press for gentle pressing. The juice was moved to stainless steel tanks for settling and clarification and then it went through fermentation over a 10-day period. Once primary fermentation was completed, the wine put in 100% 5-6 year old neutral barrels where it remained for 3 months until bottling.

Tasting Notes

Aromatics:            Aromas of fresh lemon zest, grapefruit, citrus blossom and a hint of cut spring flowers.

Body/Texture:      Crisp and delicate with a touch of richness that lingers on the palate.

Flavor Profile:     Soft honeydew melon, garden ripe grapefruit, sweet lemon curd and a suggestion of flintiness.
